CHARACTERISTICS OF THYME HONEY
Thyme honey is produced from the nectar of thyme flowers (Thymus vulgaris, Thymus chriodorus). It has a dark color and a sweet taste with subtle sour and sometimes salty notes. Its strong and persistent aroma makes it a distinctive variety, with sensations that can vary depending on its natural composition and the surrounding flora.
It is produced in the pre-coastal area of Catalonia, the lower Aragon and Castile and Leon. It is harvested from mid-April to the month of June.
Thyme honey crystallizes thanks to its purity. Crystallization of this variant is slow or scarce, due to its high fructose content. We can change its texture if we heat it up in a double boiler (or bain-marie) at less than 40ºC.
